    Household Storage Method

    Refrigerator storage

    After receiving the hairy crabs, place them in the refrigerator’s cold storage
    compartment at around 5°C and cover them with a damp towel.

    You can touch the eyes of the hairy crabs with your finger. If the crab
    does not react, it is best to consume it first.

    What to Avoid
    1. Dead crabs should not be eaten as they can be poisonous. Dispose of them after receiving compensation.
    2. Avoid eating hairy crabs with persimmons or pears, as this combination can result in food poisoning. If consumed by mistake, seek medical advice promptly.
    3. Those with a sensitive stomach or cold digestive system should limit their intake of hairy crabs.
    4. Pregnant women and children should consume hairy crabs in moderation to prevent potential discomfort from excessive cooling effects.
    Identifying a Dead Crab
    1. Pick up the bound hairy crab and gently touch its eyes with your finger. If the eyes blink, it indicates the crab is alive.
    2. Fill a basin halfway with water and place the bound hairy crab in it. Observe if bubbles come from its mouth. Bubbling indicates the crab is alive.

      Note: Do not leave the crab in water for too long, as it may die from lack of oxygen.
    3. Gently straighten the smallest pincer and see if it quickly returns to its natural curve. If it bends naturally, the crab is fresh.
    4. Untie the crab and see if it attempts to crawl. If the crab can crawl, it indicates it is still vigorous. naturally, the crab is fresh..

    HOW TO COOK

    1Preparation

    Rinse the crabs thoroughly under cold water to remove any impurities. Use a brush to clean the shell and legs.

    2Steaming

    Fill a large pot with water and bring it to a boil. Place the crabs on a steaming rack, belly side up, to preserve the precious roe. Steam for 15-20 minutes until the crabs turn a bright orange-red color. Always monitor the cooking process closely.

    3Serving

    Let the crabs cool slightly before handling. Remove the strings before placing the crabs on a plate. Serve with a dipping sauce by mixing chopped scallions, ginger, and balsamic vinegar.
